Ginger Miso Dressing

Serves 4-6

  • 5 tbsp. honey
  • 4 tbsp. oil
  • 4 tbsp. rice vinegar
  • 4 tbsp. miso paste (brown or yellow)
  • 1 tsp. powdered ginger
  • 2 tsp. fresh ginger (grated)

Mix powdered ginger with vinegar and break up any clumps with a fork. Whisk together until thoroughly dissolved. Whisk in the miso until it forms a smooth paste. Whisk with remaining ingredients. Do not attempt to get the dressing completely smooth; the fresh ginger will add a slightly rustic texture.
Taste dressing on a piece of lettuce and add more fresh ginger if desired.
